Baked Potato Soup
This soup is super easy & yummy! Its perfect for a cold night this soup is very filling and warms you up. This is also a really great recipe for kids, I let my son add in some extra cheese and bacon to his and he thinks its so cool to help! Ingredients:
2 large or 3 medium baking potatoes, baked or microwaved
•1/4 cup (1/2 stick) butter or margarine
•1/4 cup chopped onion
•1/4 cup all-purpose flour
•1 can (14.5 fl. oz.) chicken broth
•1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
•Cooked and crumbled bacon, shredded cheddar cheese, sliced green onions (optional)
Directions:
MELT butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 1 potato (reserve potato skin); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining potato skin and potato(es); add to soup. Heat through. Season with salt and ground black pepper. Top each serving with bacon, cheese and green onions, if desired.
Of course you can always add or subtract anything you want, it tastes great with a dollop of sour cream ontop!

A new begining
I've been reading,following and subscribing to blogs for a long time now but I have't had alot of time to really write much in my own blog. Im really excited to get started on this. Well I guess I'll begin with a little about me. My name is Kristin and im a single mother of two children that keep me very busy! Hayden is 3 and such a handlful! My daughter Rylee will be 1 in Feb. I got lucky that she's laid back and really easy to please. Im really looking forward to sharing with you all!

I went to do a little christmas shopping for myself since everyone else's was done. I went to the Old Navy Outlet store and they had a 50% off all clearance sale! They had everything you could think of on sale! I got 9 shirts for myself, 2 for my mother, a long sleeved onsie, a romper and a pair of capris for under $20!!
